INGREDIENTS/DIRECTIONS

Beef Ingredients

1/2 teaspoons garam marsala 

1/2 teaspoons curry powder

1/2 teaspoons black pepper 

1/2 teaspoons seasoning salt 

1/2 teaspoons salt

4 tablespoons oil (for frying)

Directions

​

(1) Combine dry ingredients with beef and mix thoroughly 

(2) Add oil to a frying pan

(2) Fry beef until golden brown 

(3) Remove from heat and set aside

Jollof Ingredients

​

1 can tomato sauce

1/2 can tomato paste

2 teaspoons curry powder

2 teaspoons garam marsala

2 teaspoons anise

3 Bay Leaves 

1 teaspoon salt 

1/2 yellow onion (chopped)

4 cups Jasmine rice 

1 bag frozen vegetables (I prefer carrots and peas)

Directions 

(1) Place 1 tablespoon olive oil in a pot with onions and saute for about 5 minutes  

(2) Add anise to pot and let cook for 10 minutes on low heat 

(4) Add remaining spices to the pot (except for the salt and bay leaves) and cook for another 5 minutes

(3) Add tomato paste to the pot and stir. Add tomato sauce, and salt to the pot and stir. Let simmer for 5 minutes

(4) Add bay leaves

(5) Add 4 cups of rice to the pot, stir, and let cook for about 5 minutes 

(6) Add 1 3/4 cups of water to the pot and cover with aluminum foil, then place the lid on the pot and turn heat to low 

(7) Cook for 30-45 minutes or until rice is cooked (Note: Let steam/heat from pot cook the rice and only add water as needed- a maximum of 2 cups of water can be added)

(8) Add cooked vegetables to rice and stir

(9) Add cooked beef and stir

Note: Jollof can be eaten as a dish on its own. Vegetables and meat do not need to be added.
